Scalloped Scallops

  • 1 pint Dorr scallops
  • 1 cup Ritz cracker crumbs
  • 1 small onion, finely chopped
  • 1/2 cup bread crumbs
  • 3/4 cup grated cheese
  • 2/3 cup light cream
  • 1 tablespoon lemon juice
  • 1/2 cup butter
  • Salt and pepper to taste
  • 1 tablespoon parsley flakes
  • Garlic (optional)

Preheat oven to 350 degrees.

Melt butter in a frying pan.  Slowly add chopped onion and saute.  Add lemon juice, cracker crumbs, parsley, garlic, salt and pepper.  Mix well.

Place a layer of scallops in a buttered casserole dish.  Top with crumb mixture.  Repeat for two more layers.  Top with cheese.  Pour cream over the top.  Cover and bake for 30 minutes.  Remove cover and bake for another 10 minutes.
