Pan-Fried Italian Breaded Cod

  • 1 pound of cod fillets
  • 1 egg
  • 1 cup Progresso Italian seasoned breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/2 cup olive oil

In three shallow bowls or plates add flour to one, the breadcrumbs to another then whisk the egg in a third.  In a large frying pan add oil so it covers the bottom  and heat on high.

Dredge the fish in flour and then dip in egg so it is coated before covering the fish in breadcrumbs.  Lightly press breadcrumbs onto fish.

When the oil starts to shimmer, add fish.  Take caution for any hot oil splatter that may erupt.  Reduce heat to medium and cook until golden brown evenly on both sides (about 2 minutes each side).  Serve immediately.
