Low Country Boil

  • 6 lobster tails
  • 2 pounds shrimp
  • 2 lemons, halved
  • Sweet onions
  • 1 head garlic, havled
  • 2 pounds smoked sausage
  • 2 pounds new red potatoes
  • 4 ears of sweet corn, halved
  • Salt and fresh cracked pepper
  • 1/2 cup Old Bay seasoning
  • 1 (24 ounce) can of beer

Fill a large stock pot 2/3 full of water and bring to a boil.  Add beer, garlic, lemons, Old Bay seasoning and pepper to taste.  Add potatoes and cook for 5 minutes.  Add sausage and corn and cook for 3 minutes.  Add shrimp and lobster tails and cook until pink.

Strain out and dump on butcher block or brown paper.  Serve with melted butter, cocktail sauce and a loaf of crusty bread.
