- 1 pound of pasta
- 6 tablespoons of butter
- 2 cloves of garlic, chopped
- 4 tablespoons of flour
- 1/3 cup of wine
- 4 cups heavy cream
- 2 cups shredded cheddar
- 2 cups Gruyere cheese
- 4 ounces goat cheese
- 1/4 cup seasoned bread crumbs
- 2 lobsters, claws and tail meat, chopped
Preheat oven to 350 degrees and grease a 9x9 baking dish.
Heat a large pot of salted water over medium heat until boiling. Add pasta and cook until al dente.
Add butter to a large pan, stirring over medium heat. Once the butter melts, add the garlic and saute until translucent. Season with salt to taste. Add the flour and the white wine and reduce by half, about 3 minutes. Slowly add the cream, whisking well to remove any lumps. Bring the cream to a simmer and turn the heat to low. Reduce until the cream is thick, abouit 5 to 10 minutes.
Add in the cheeses, a handful at a time, stirring well after each addition. Add the chopped lobster meat to the sauce. Add the pasta to sauce and stir. Pour into the greased baking dish and sprinkle with the bread crumbs.
Bake for 25 minutes.
