- 4 lobster tails
- 1/2 cup salted butter, softened
- 2 tablespoons lemon zest
- 1/2 tablespoon thyme, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 clove garlic, minced
- Pinch of salt and pepper
- Olive oil
- Metal skewers
Preheat your grill to medium high.
Blend butter, lemon zest, thyme, parsley, garlic, salt and pepper. Cover and set aside.
Butterfly the lobster tails down the middle of the underside of the shell. Insert skewer so the tail stays straight. Brush with olive oil and season with salt.
Grill lobsters cut side down fro about 5 minustes. The shells will turn bright red. Turn the tails over and spoon the herbed butter on top of the meat. Grill for another 4 minutes.
