Grilled Salmon with Green Beans

  • 4 servings of salmon
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespons chives
  • 1 lemon, cut into 8 slices
  • Fresh green beans
  • Heavy-duty aluminum foil- 4 pieces (to make packets)

Heat grill to medium low heat.

Boil a pot of water on the stove.  Add green beans and cook for 1 minute.  Immediately remove beans from the pot and place in a bowl filled with ice water to stop the cooking process.

Spread out 4 pieces of aluminum foil.  Place a handful of green beans in the center of each packet.  Top with salmon.  Brush fish with olive oil on each side and sprinkle salt and pepper on top.  Add sliced lemons to the top of the fish.  Fold the aluminum foil to form air-tight packages, leaving room inside for the air to circulate.

Place sealed packets on the grill and cover.  Cook for 15 minutes, rotating packets a 1/2 turn half way through.  The fish is done when the meat flakes easily with a fork.

Sprinkle the fish with chives before serving.
